Beef in Black Bean Sauce

This is a great clean and healthy alternative to a takeaway!

Ingredients:

  • 5 Striploin steaks or 10 Sirloin minute steaks
  • 1 Pack of Green Beans
  • 2 Carrots
  • 1 Red Pepper
  • 1 Pack of fresh Basil
  • ¼ Cup Cashew Nuts
  • 2 Spring Onions/ Scallions
  • 1 Tin Black Beans- Drained and rinsed
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Ginger
  • 1 Tbsp Chinese Five Spice
  • 1 Tsp Garlic
  • ½ Cup Water
  • A couple of grinds of sea salt

Method:

  1. If using striploin steaks, cut them into two and then use a meat tenderiser them to make them about the thickness of a bacon rasher. Do the same if using minute steaks
  2. Prepare your veg: Cut the ends off your green beans, cut your pepper into thin long strips, use a potato peeler to slice your carrots into thin strips.
  3. Place a small mixture of all of the veg into the middle of each piece of steak, along with a basil leaf and then tightly roll up.  See picture above for how to do this.
  4. Heat a griddle pan up to a high heat.
  5. A few at a time, char the steak rolls on the griddle pan.  When you first place them in the pan, place them with the join side down, so that you seal the roll and stop them unravelling as the meat shrinks! Cook them for a few minutes on each side so they are nicely charred, but not cooked though.
  6. Meanwhile, heat your oven to 180C
  7. When you have charred all of your steak rolls, place them in the oven to finish cooking to your liking- this will really depend on how you like your steak cooked, I usually cook these all the way though and put them in the oven for about 15 minutes.
  8. Whilst your rolls are cooking, you can make your sauce
  9. Place the following ingredients in a sauce pan and heat on a medium-high heat: Black beans, maple syrup, ginger, Chinese five spice, garlic, water.  Give it a good stir and allow to simmer with the lid on for 15- 30 minutes. (the time is not very strict, the flavours will just intensify)
  10. In a frying pan, heat up a little coconut oil, and stir fry the scallions and cashew nuts. Once your sauce in the sauce pan has finished simmering, add this to the frying pan with the scallions and nuts, season with a bit of salt and allow the mixture to reduce down and thicken slightly.
  11. Serve the steak rolls with a few spoonfuls of the sauce over the top. YUM!
