Beef Koftas

Quantity:
Makes 5 Portions
Ingredients:
- 500g Lean Beef Mince
- 1/3 of a pack of fresh Parsley (about half a cup)
- 1/3 of a pack of fresh Coriander (about half a cup)
- 1 onion- Chopped
- 1 Teaspoon Ground Coriander
- 1 Teaspoon Ground Cumin
- 1 Teaspoon Ground Paprika
- Freshly ground Salt & Pepper
Method:
- Heat the grill up to Medium/ High
- Line and oven tray with foil
- If you are using wooden skewers, soak them in some water
- Place the onion and chopped fresh herbs into a blender, or bowl if using a hand blender, and blend into a paste.
- Add all of the other ingredients to the paste mix and using your hands mix well.
- Take chunks of the mixture and form around the skewers in a sausage shape (see pics above) and place them on the oven tray.
- Brush with a little oil, I used rapeseed, and place under the grill
- Grill for 10-15 minutes on each side until cooked through
Serving Ideas:
- I served mine with bulgur wheat, with lemon juice & zest, raisins and sliced almonds stirred though it to give it a Moroccan theme! Bulgur wheat is a wholegrain, it’s protein and calorie content is similar to quinoa, but it has about 1/3 of the fat and 2.5 times the amount of fibre as quinoa per 100g, so is a great choice if you have no issues with wheat!
- I also served them with the carrot, courgette and feta bhaji’s.
- They would also go well with a greek yoghurt dip with lemon & fresh mint stirred in.
