Chili Lime Turkey Burgers

These are so quick and easy and a really tasty way to liven up your turkey mince! I left mine to marinate over night before cooking them, I think you could just cook them straight away as well though. You could double the quantities of everything if you want a bigger portion.

Quantity:

It makes enough for 5 portions

Cost:

€6.50 in total or €1.30 per portion

Ingredients:

  • 450g Turkey Mince
  • ¼ of a Red Pepper- chopped finely
  • A Bunch of fresh coriander- chopped
  • 2 Garlic Cloves- minced
  • ½ Tsp chilli flakes or easy Chilli’s
  • The juice of one Lime
  • 1 Egg

Method:

  1. Mix together all of the ingredients- you can then either leave it in the fridge for a few hours or even over night, or cook them straight away.
  2. Form into burger patties with your hands
  3. Heat the oven up to 180C and also heat a griddle pan on a high heat.
  4. Cook the burgers on the griddle pan so that you get some nice charring (about 10 minutes) making sure you flip them over.
  5. Then finish off in the oven, on a wire rack for 20 minutes
  6. Make sure they are fully cooked though by cutting one open and having a look.

Tips-

  • These would probably make nice meatballs too if you didn’t want to make them into burgers.
  • I served mine with stir fried ribbons of veg. These are really easy to make (no need for a recipe of their own!), run a potato peeler along a couple of carrots, as if you were peeling the carrot, but keep going so that the whole carrot is 'peel'. Do the same with a courgette. Now stir-fry your veg 'ribbons' on a high heat in a bit of coconut oil, add a few dashes of 'Franks Sauce' as they are cooking, once the veg starts to soften, serve with your Turkey burgers!
  • If you wanted to increase the overall protein, rather than increase the amount of meat, you could just serve these with the cauliflower and broccoli cheesy muffins, each of them has an additional 10g of protein
