Mozzarella Stuffed Turkey Meatballs

These are a doddle to make and always go down really well when I make them! They are a firm favourite in the lunch box. Very cheap and easy to make, I’m sure kids would love them too!

Ingredients:
- 450g Turkey Mince
- 500g Passata (1 standard carton)
- ¼ Cup of Oat Flour (see tips below for how to make this)
- 125g Fresh Mozzarella- This is one standard mozzarella ball
- 1 Tbsp Mixed Dried Herbs
- 2 Tbsp Original Franks Sauce
- Freshly ground black pepper
Method:
- Heat the oven to 175C
- Line an oven tray with foil
- Drain the mozzarella ball and chop into 10 cubes
- In a bowl, using your hands, mix up the mince, oat flour, dried herbs and a few grinds of pepper.
- Form the meat balls as per the picture above. Firstly flatten into a burger shape, place the mozzarella in the middle, then shape into a ball around it. Do this to make 10 meat balls and place them on your oven tray.
- Now either lightly brush with some cooking oil, or spray with some cooking oil (just a very light coating)
- Cook in the oven for 30 minutes until lightly golden.
- On a low- medium heat, in a pan heat up the passata and Franks Sauce.
- When your meatballs are cooked, add them to the pan with the sauce, one by one and coat them in the sauce. Once all the meat balls are in the pan, put the lid on the pan and allow them to cook for a further 10 minutes.
- Remove from the heat & allow to cool slightly in the pan.
- Either serve & eat, or when cool divide into containers.

Tips:
- Oat Flour-To make this, just place some porridge oats in the food processor and process until they resemble flour. Keep in a zip-lock bag and use in the place of flour or breadcrumbs!
- These meatballs go well on top of kale and served with the high protein veggie muffins. They also freeze really well.
- The recipe can easily be doubled if you want a bigger portion.
