Teriyaki Beef Stir Fry
This dish is so easy and literally takes 10-15 minutes to make in total. Even complete beginners will have no trouble with this!

Ingredients:
- 500g Beef- Sirloin steak
- 3 Large Carrots
- 1 Courgette
- 200g Tenderstem Broccoli (the baby broccoli you get in a packet)
- ½ Cup Raw Cashew Nuts
- 1 Tbsp Grated Ginger
- 1 Tbsp Easy Chilli’s (the ones in a tube)
- 3 Tbsp Teriyaki Marinade
- 2 Tbsp Coconut oil
Method:
- Heat a hob ring to a high heat
- Cut up your steak into thin strip and place in a bowl
- Add to the bowl with your beef: Ginger, Teriyaki and Chilli, give it a good mix around and rub it into the beef with your hands
- Using a potato peeler, make vegetable ribbons with your courgette and carrots, and slice your broccoli into halves/ thirds (bite sized pieces)
- Add the coconut oil to the frying pan.
- Now add in all of your veg and stir fry for 10 minutes, or until the veg is as soft as you like it, stirring all of the time
- Remove veg from the pan and place to one side
- Now add the beef and marinade and the cashews to the pan and stir fry until the beef is almost fully cooked.
- Now add the veg back into the pan with the beef and stir fry the whole lot for a few minutes.
- Remove from the pan & eat!

Tips:
- If you think ahead, you could leave your beef marinating over night or for a few hours, for a more intense taste, it’s not essential though!
